One thing to keep in mind for carrying stuff in your backpack is that you won't want to carry anything valuable in it. If you've ever trooped before, you know that there are those little jerk-off BRATS that like to actually try to destroy or steal stuff from your costume. I can't really feel anything on my backpack unless it's a very hard bump, so you'll not want to store anything you mean to keep in the little pouches at the bottom.
And with that, I think you better option for closure will be velcro. The pouches on the GM pack don't have any noteable means of closure (no snaps or anything), so velcro should keep them closed but keep the closure method relatively invisible.
I look forward to the leather pouches!

I will consider velcro...I am REALLY not a fan of velcro though...I think at tandy leather (where I get my leather, tools and other leather-related goods) they have WHITE snaps...So, they MIGHT look ok...the thing I like about the snaps, is that (unlike velcro) when it's on you KNOW it's on...Velcro could be loose (fuzz in the actual 'cro) or something like that...Plus, in regard to the little brats stealing/F****** things up, the snaps would be louder/easier to hear someone picking it and would take a lot more force to open and probably making it so that the motion would alert me to them stealing...So, I know that it wouldn't be canon (or perfect at least), but for safety/thievery purposes, the snaps (for me) would be a nice compromise...But I WILL consider, what you say...And I'm sure that I will let you know either way (for discussion purposes) and show pics when I is getting worked on and when finished...so, basically, you haven't heard the last of me yet, bwuhahaha...

From experience, a big ol' piece of velcro is far louder than any snap could hope to be. Instead of "pip" you hear "RRRRRRRRRIIIIIIIIIIIIIIIIIIIIIIIIIIIPPPPPPPPPPPPPPPPPPP." The bigger the piece of velcro, the better the hold, and with these pouches, we have a fair amount of surface area to work with. A friend of mine is a professional leather worker, and he's done velcro patches on thinner leather, and the hold is fantastic. He also makes Jedi belts, and they are held together with a giant patch of velcro. No slipping or anything. Also, one plus for velcro is that, because of the surface area, it's less likely for the flap to "bow out" at the top like a lot of snapped leather objects do (typically of harder, thicker leather).
Just throwing out more things to consider.
But it all boils down to how accurate you want your backpack to be. And this goes for anything, not just GM stuff: functionality (at least with clone stuff) almost always takes away from the accuracy of any given part. Not necessarily wholly, but some accuracy is taken away. Think of it as a scale with "accuracy" on one end and "functionality" on the other. More accurate = less functional, more functionality = less accurate.

This is true...Maybe I am just biased and really like snaps...I am not a fan of velcro (as I said) and I am not lying there, but with my design I could use the velcro GAIN more accuracy and still keep the functionality...I might do that...Of course, it will still probably be awhile before I start on the GM backpack...Leather is NOT cheap and I haven't gotten my armor yet...I am going to wait to get my armor at least partially assembled so I can design the pack to my size and shape AND for the size, shape and placement of my armor...

My friend's little brother and I were talking yesterday; I was explaining my ideas/plans for my standard EP II clone and my GM...Well, when I finally got to the part (ideas) for the GM backpack constructed like my belt pouches, we both came up with this AWESOME idea...If anyone here has seen/remembers the movie "twister", the guy dusty had a water tank behind his seat in the "barn burner" (short bus that he drove)...When that came up, I was thinking about adding an extra non-canon pouch on the GM backpack (or a holder in the center/main pouch) for a 1 liter bottle of something (pop/koolaid, whatever) and run clear plastic tubing up through the backpack, under the GM bucket's cowl and mounted with a cable-type tie about where a microphone stalk would go, so I could keep hydrated at a convention/event...Any thoughts on this?

It's a pretty popular option for those at the big cons. I know a lot of people kept their "adult" beverages in them at Dragoncon.

So much camel in this hobby! Camelbacks for hydration. Camel toe is the bane of Biker Scouts and their cumberbunds. Camel hair is a popular alternative to Boba Fett wookiee scalps... What other camel parts can we use in this hobby?
As for the camel back in the backpack. It'd be super easy to conceal. Just stuff the water pack in the main box of your backpack. Just make sure to build your backpack around a box that can be opened (I designed mine specifically with this in mind).

yeah that would work...I like that idea...I am ALWAYS really thirsty...That's kind of the disadvantage to being a little overweight...Although, I have to say, that I am getting better on that front...I have been working out quite a bit in the last 3/4 weeks and am trying to make it either an everyday thing or at least a normal few times a week...I just want to lose my gut because, with a normal TC, it would be hard enough (not TOO bad) to hide, but with a GM, where the armor ends right below my boobs (pecs for most guys ) and starts again right at my knees, so a guy would REALLY show with a GM...And with as much as I am getting into this (costuming and all that follows it) I have a feeling that my GM will be my prize/# 1 costume... Sorry, kind of got off subject there...But yeah, CF, I DO like that idea

Is the backpack material also vinyl or like a thick material, and does it have a certain color?

I think that the Captain did his in vinyl, but since I do a little bit of leatherworking, I would do mine in leather (and fully functional too.) Check out the pics in the first post. Dave cleared the GM flickr account and those pics got deleted but I am going to reload them from my personal flickr account.
